Elysian Springs Apple Cart Rosé 2020, Adelaide Hills

Not to upset the apple cart; but we just couldn't help ourselves! Pinot purists may turn up their nose, but we are tickled pink. The fruit was picked at optimum ripeness and acidity to showcase the flavours from the vineyard. It was immediately soft-pressed to ensure none of the harsh tannins or bitterness of the skins were removed, and fermented in stainless steel to preserve the bright summery characters of our Pinot Noir.
